Pumpkin Latte Bars

This yummy dessert is perfect for the fall season. The frosting topping is creamy and the walnuts add crunchiness. Try this recipe; you will not be disappointed.

Bar Ingredients:

1⁄4 cup freshly brewed Cubico Coffee House Blend, cooled
1 (18 ounce) box of spice cake mix
1 (15 ounce) can of pumpkin puree
1 large egg

Topping Ingredients:

15 ounces cream cheese, softened
1⁄2 cup sugar or brown sugar
1 large egg
1⁄4 cup of freshly brewed Cubico Coffee House Blend, cooled
1 (46 g) packet instant cinnamon and spice oatmeal
1⁄3 cup walnuts, chopped


  1. Lightly spray a baking pan with cooking spray. Preheat oven to 350°F .
  2. In a large bowl, blend together cake mix, pumpkin, cooled Cubico Coffee House Blend and egg. Set aside. 
  3. In a medium bowl, beat cream cheese and sugar. Pour egg and Cubico Coffee House Blend. Beat until smooth.
  4. Place cake batter into backing pan. Spread the cheese mixture evenly over the cake batter. Sprinkle with instant oatmeal and walnuts.
  5. Bake for 15 minutes at 350°F. Reduce the temperature to 325°F and continue baking for 45 minutes.
  6. Let it let cool completely before cutting. Serve at room temperature and enjoy!
